Before you can delete a product family, you must select a new product family to move the products to.
Simply select a new product family from the pull-down list.

When the confirm deletion button is click on; any products that used the product family being deleted will be update to use the new product family.  There is no way to reverse the process other than creating a new product family and manual assigning the desired products to it.
